Baker on the Bay

Handcrafted on the Coast at Bull Bay, Anglesey

The Einkorn Collection

Einkorn is the oldest known cultivated wheat, prized for its golden hue, delicate sweetness, and digestibility. With a single grain per husk, it represents the earliest partnership between humans and wheat.

At Baker on the Bay, we celebrate Einkorn’ s gentle flavour and natural nutrition through slow fermentation and iron-baking. Each loaf in the Einkorn Collection expresses a different balance between lightness and heritage depth - from soft and buttery to nutty and full-bodied.

Our process brings out the grain’ s natural colour and aroma, resulting in bread that feels timeless, nourishing, and distinctly our own.
